Simple Salad to Help Cool the Body

One thing I know being a native Floridian is that there’s nothing like having something cool and delicious to beat the summer heat or in this case Spring time heat. My go-to during this season is an easy salad to that can be made in under 10 minutes - wash, cut, and prep. When the body is hot we are experiencing overactive yang in the body, or masculine energy. This is that fire and heat that also comes with the change in season. The last thing we want to do is create more heat in the body by eating hot or spicy foods. The best way to create more balance is to eat cooling food to keep the body regulated.

What inspired me to create this was it‘s simplicity and Mediterranean vibes. I'll take any chance to add an olive in a recipe. I salads with green leafy vegetables but sometimes I either forget to buy them or they end up going bad if I don't eat them right away. This salad doesn't get soggy and can be made in large batches to bring to the beach, picnics, or meal prep for an easy go-to snack. In my experience the longer it marinates the more delicious it is. Enjoy!
Cooling Cucumber Salad
Ingredients
What you need:
2-3 english cucumbers
1/2 jar of Kalamata black olives (I use a whole jar cause I love olives)
1/2 red onion
1/4 cup of apple cider vinegar
2 tablespoons of Olive Oil
2-3 dashes of Trader Joe’s Green Goddess seasoning (optional)
2-3 dashes of salt
2-3 dashes of pepper
Directions
What to do:.
Wash and dry all your veggies
Quarter cut cucumbers (peel is optional)
Half the red onion and thinly slice it creating thin crescent like strips
Put all the veggies into a bowl
Add apple cider vinegar and your seasoning of choice
Stir it all up
Put in the fridge for one hour or serve at immediately your choice!
